We’re always looking for healthy, nutritious meals that are easy to prepare. In addition it is always a bonus if we can prepare enough to freezw some for some extra meals. This Crock Pot meal fits the bill.
5-6 frozen chicken breasts cut to bite size
5-6 carrots cut to small bite size
2 cans coconut milk: 1 full fat, 1 lite
3 large sweet potatoes cut to bite size (or Dioscorea batatas (korean yam) for Michael)
2 onion cut up
1 whole garlic (crush each clove and press out)
1 tbsp Grated Ginger (fresh)
1/2 tbsp each of red and green curry paste. (Add additional to taste after reaching 165 degrees)
2 tbsp red curry powder (1 + 1 additional to taste, check freshness)
1 tbsp Ginger powder (add extra to taste, check freshness)
juice of 1/2 lime (not sure if this is noticeable)
Put ever thing in 6 qt. crock pot and cook until it reaches 165 degrees then taste and add any additional spices.
Now optionally fill pot by adding fresh mushrooms, bell peppers, and green beans &/or greens. Remove all (that you don’t plan to eat at current meal) to freeze for later. 6 Qts = 6 1.5 lb. containers which will feed two people each. Finish cooking until green beans are to your liking.
Serve with yogart, bananas and peanuts as garnish
